Have you heard of this curry? I saw it on FB and read about it and even saw it on the chilled deli shelves of 7-11 recently, ..nicely packed for a convenient heat to eat meal…
So my culinary adventure begins on a cool Sunday morning…. I cycled to the wet market and supermarket, to get my groceries, spices and chicken!…first tiimer at cooking Curry!…
After that I headed back to start on my therapeutic pounding of ingredients to make the rempah..
That was the easy part… till I get to the chicken… anyway, managed to chop them into pieces and started cooking…. heat the oil, fry the limau leaves and then the rempah till the aromas filled the air. Then, add in the chicken, water, coconut milk and slow cook them till the Curry is reduced further to a thicker consistency.
OMG! The result is FABULOUS! Serve warm with a quick squeeze of lime just before eating. I find this dish really delicious snd all that I wanted in an exotic curry… made entirely from scratch !…
